Description
Comte AOP Tradition Emotion – hard cheese with a washed rind from the Franche-Comté region. It is crafted exclusively from the raw milk of local cow breeds — Montbéliarde and French Simmental — and aged for about 5–6 months.
The aging process of this Comté is overseen by the legendary affineur house Marcel Petite, whose masters mature the cheese wheels in the cool forts of the Jura Mountains to achieve a benchmark flavor.
Comté AOP Tradition Émotion features a soft, smooth, and melt-in-the-mouth texture. Milky, creamy, and balanced fruity notes intertwine harmoniously in both its aroma and taste.
This cheese is perfect for a cheese board, adding to salads, or preparing fondue. Comté pairs beautifully with dry white wines such as Chardonnay, Savagnin, Vin Jaune, and Meursault, a light red Pinot Noir, or a dry Champagne.
