Description
Soft cheese with white mold made from pasteurised cow’s milk. It originates from France, from a village of the same name.
This cheese has a very delicate consistency inside and a fluffy white rind on the outside. Chaource has a very light, simply amazing aroma of forest mushrooms and nuts. The texture is tender, slightly curd-like. There is a slight acidity in the taste. A more mature cheese will have creamy, fruity notes.
Chaource pairs perfectly with sparkling, light white and rosé wines, and champagne. It also goes well with fruits (pears and grapes) and jams.
