Description
Taleggio PDO Carozzi is an Italian soft, washed rind cheese made from raw cow’s milk. It originates in Lombardy and is produced in accordance with local traditions. It is salted by hand and aged in pinewood cases for a minimum of 40 days.
The cheese has a thin, edible rind and a delicate creamy mass. It has a delicate sweetish flavour that becomes more pronounced as it matures.
Taleggio is ideal for a cheese board, as well as for hot dishes such as polenta and risotto. It pairs well with pears, apples, grapes, honey and nuts.
Good drink pairings include fresh white wines with good acidity, light red wines and dry cider.
The cheese is made by Carozzi Formaggi, a family-owned company founded by Aldo Carozzi in 1960. The company is located in Valsassina, in the heart of Lombardy. Production originally began in Ballabio before moving to Pasturo. For several generations, Carozzi Formaggi has combined traditional cheesemaking methods with a modern approach to cheese production.
