Description
Saint Nectaire – Traditional French semi-soft cheese from the Auvergne region, produced since the 17th century from the milk of Holstein, Montbéliarde, and Salers cows.
The cheese is aged in cool cellars on rye straw for at least 28 days, allowing its natural grey-to-orange rind to develop various types of mold. Inside, it features a soft, smooth, and creamy ivory-colored paste.
The flavor harmoniously combines nutty, earthy, grassy, and mushroom notes. The cheese pairs exceptionally well with fresh bread, nuts, dried fruits, as well as light red wines (Pinot Noir, Beaujolais), fresh white wines (Chablis, Chardonnay), or pale craft ale.
