Description
Livarot is a legendary Norman cheese, traditionally made from raw or pasteurized cow’s milk. You can easily spot it by its distinctive orange rind encircled by 3–5 strips of dried sedge grass, a feature that earned it the nickname “The Colonel” (Le Colonel). These bands help the cheese keep its signature round shape.
The Petit Livarot wheel is round, typically measuring about 12 cm in diameter and weighing 200–250g. Livarot’s rind is sticky and highly aromatic, with a colour ranging from straw-yellow to reddish. The interior is soft and creamy, featuring small, open pockets. The aroma is quite powerful, blending prominent dairy and animal notes with clear hints of hay, smoke, nut, and fresh bread. The flavour is intense and complex, yet perfectly balanced—offering both spicy warmth and creamy richness.
Livarot is best enjoyed simply with a baguette and a glass of Norman brut apple cider. It also pairs excellently with aromatic white wines from Alsace or a crisp Chenin Blanc.
