Description

Morbier is a semi-soft pressed cheese with a washed rind, originating from the Franche-Comté region of France. Producers craft it using cow’s milk. Morbier is instantly recognizable by its signature thin, horizontal layer of vegetable ash running through the center. Historically, this ash divided the morning and evening milkings.

The cheese features a slightly sticky, orange-brown rind and an elastic, soft paste. The aroma is subtle, with earthy and fruity notes. The flavour is creamy, buttery, and features a slight fruity or nutty finish.

Morbier pairs excellently with local Jura wines: Savagnin or Poulsard. A dry white wine or light Burgundy red (Pinot Noir) also works well. Serve it best with walnuts, whole-grain bread, or apples.
