Description
Pérail d’Hyelzas is a soft French sheep’s milk cheese produced in the Lozère region from the raw milk of Lacaune ewes. The cheese has a flat disc shape with a thin velvety rind and a delicate, creamy texture that becomes almost runny at room temperature. Its refined creamy flavor is complemented by a light aroma of wild herbs, making it an excellent choice for a cheese board.
The cheese is best served with a fresh baguette, fig or cherry jam, walnuts, and honey, while a dry white wine (Sauvignon Blanc, Sancerre) or a light red wine (Pinot Noir) serves as the ideal accompaniment.
