Description

Langres is a distinctive soft, washed-rind cheese. It comes from the Grand Est region of northeastern France. Producers make this French specialty exclusively from cow’s milk. Its unique shape makes it instantly recognizable: a small cylinder featuring a central depression. French locals call this well the “fontaine” (fountain).

To form the “fontaine,” producers never turn the cheese while it ripens. Its colour ranges from light yellow to bright orange. They create this rich hue by repeatedly washing the rind with a brine solution. The brine contains salt and the natural dye, annatto. Producers may also add Marc de Bourgogne (grape pomace brandy) or another spirit to the brine to boost the aroma.

Langres is excellent on its own. Its melting quality also makes it highly versatile for cooking. Try it in salads, on burgers, or melt it into pasta and baked potatoes. It pairs beautifully with regional classics like Champagne, Brut cider, dry white wines, or light, fruity red wines.
